large head of broccoli
3 Tbsp extra-virgin olive oil
1 tsp kosher salt (or 1/2 tsp table salt)
1/2 tsp sugar

Directions:
Adjust oven rack to lowest position, place large rimmed baking sheeting on rack, and heat oven to 500º.

Peel broccoli stem to remove thick skin. Cut stem into long, 1/2" thick pieces. Cut the broccoli head into long, narrow florets. Put in large bowl, drizzle and toss with olive oil. Add salt and sugar and rub into broccoli with hands. Quickly and carefully transfer broccoli to the preheated cooking sheet in a thin layer, roast for 9-11 minutes.

Serve immediately.
