6 slices of bread cut into 1" cubes
1 lb grated Velveeta (recipe calls for box but bags may be used, as well as cheddar
1 lb bacon, cooked and crumbled (may substitute sausage)
1 4 oz can mushrooms (optional)
8 eggs
4 cups milk
1 tsp salt
2 tsp dry mustard

Grease 9 x 13 casserole pan using butter or cooking spray.
Put bread cubes in bottom.
Cover with cheese and bacon and then mushrooms.
Beat eggs, mix with milk, salt and mustard.
Pour over bread and cheese.
Cover with foil.
Bake 350 F for 1 hour.

This was Larry's mom, Delores' recipe. She made it every year on Christmas morning. We opened presents while it baked and then enjoyed it. She is gone now, but we continue to have the casserole on Christmas morning or whenever the family is together.

I make smaller portions to satisfy all of the special diets -
Substitute GF bread for the a gluten free version
Substitute vegetarian crumble for meat for vegetarian version
Substitute egg whites for whole egg
Spinach may be added
