2 Pounds Frozen hash browns
½ Cup Melted butter
1 Cup Diced onion (can substitute several tablespoons of dried minced onions)
10¾-Ounce Can Condensed cream of chicken soup
8 Ounces Sharp cheddar cheese
16 Ounces Sour cream
½ Cup Shredded parmesan
Salt and pepper to taste
1 Cup Crushed corn flakes (can substitute smashed Ritz crackers)

Thaw potatoes for 30 minutes. Preheat oven to 375º F. Thoroughly grease a 9x13 casserole dish.

Combine all ingredients (except corn flakes) in large bowl thoroughly. I like to blend the spices in the sour cream first to ensure even distribution. I also find it easiest to mix using my hands, but the slightly thawed potatoes make my hands really cold! Do a little at a time to give your hands a break.

Spread in prepared dish and top with corn flakes. Place dish on a cookie sheet (in case it spills over) and bake for 60 minutes.

Allow to cool slightly before serving to help it set up.
