2 Medium Granny Smith apples
1 Large can pineapple chunks, drained (reserve juice)
1½ Tablespoons White vinegar
½ Cup Sugar
1 Tablespoon Flour
1½ Cups Peanuts (no skins)
8 Ounces Cool Whip
2 Cups Mini marshmallows

Directions:
Directions:
Combine pineapple juice with vinegar, sugar and flour in medium sauce pan and stir well. Heat over low/medium meat, stirring frequently until it comes to a boil. Continue to boil, stirring constantly until it thickens to the consistency of a syrup. Remove from heat and allow to cool completely.

Meanwhile, slice and chop apples into small pieces, about the size of the mini marshmallows. Quarter the pineapple chunks.

In large serving bowl, toss apples, pineapple, marshmallows and peanuts. Fold Cool Whip into cooled sauce and blend thoroughly.

Pour whipped topping sauce into the serving bowl and mix well. Cover and chill before serving.

My cousin gave me this recipe, and it's always popular, especially for kids. It's called a salad, but is sweet enough to be dessert, too!
