2 cups all-purpose flour, plus more for work surface
1 cup cold unsalted butter, cut into pieces
1tsp. kosher salt

Filling
9-10 Granny Smith apples peeled and thinly sliced
1/2 cup granulated sugar
1/4 cup all purpose flour
1 tsp. ground cinnamon
2 Tbsp. unsalted butter cut into small pieces

Crust
Mix together flour, butter and salt in a bowl until butter is incorporated. Sprinkle 2 to 4 Tbsp. very cold water into mixture kneeling as you add water until dough comes together. Turn out on floured surface and kneed until it forms a smooth ball. Divide in half and shape into 2 disks. Wrap in plastic wrap and chill for at least 2 hours. Unwrap and let stand 5 minutes then sprinkle with flour and roll into 2 12 inch circles. Fit into pie dish and chill.

Filling
Preheat oven to 425º with rack on lowest position. Stir together apples, sugar, flour, cinnamon,on and salt in large bowl until apples are evenly coated. Spoon mixture in pie crust. Sprinkle with butter.

Unwrap remaining pie dough and let stand until softened. cut into 3/4 inch strips. Arrange strips in lattice pattern over pie.
Place pie on baking sheet. Bake 15 minutes then reduce heat to 350º. Continue baking for 45 more minutes. Cover loosely with aluminum foil to prevent excessive browning. Bake until juices are thick and bubbly and crust is golden brown. Color 1 hour.
