Chicken with Peanuts |

Ingredients: 2 chicken breasts, boned and skinned
2 scallions in ¼ inch pieces
2 whole dried red chili peppers (or sweet chili sauce as an alternative)
6 Tbsp oil
½ cup peanuts, raw

Directions: |
Directions:Step 1: Cut chicken breasts into ½ inch cubes. Mix with marinate and let sit at least 30 minutes.
Step 2: Combine sauce ingredients
Step 3: Heat wok hot. Ass oil. Toss in peanuts. Remove almost immediately to prevent burning. Set aside on paper towels.
Step 4: Reheat oil to medium temp. Add the chicken cubes to the wok and raise the heat. Stir-fry until the chicken becomes opaque. Remove with slotted spoon.
Step 5: Reheat the remaining oil and stir-fry the chili peppers until they turn dark red. NOTE: The darker in color the chili peppers become, the hotter the taste)
Step 6: Add the scallion and cooked chicken and stir-fry 1 minute.
Step 7: Stir the sauce mixture into the wok until it thickens and coats the chicken with a clear glaze.
Step 8: Stir in the peanuts, mix well and serve. |
