2 teaspoons grated fresh ginger
1 teaspoon chili powder, mild or hot
½ teaspoon ground turmeric (I prefer curry powder)
1 tablespoon extra-virgin olive oil
1 pound lean pork loin, trimmed of excess fat

Directions:
Directions:
1. Preheat the oven to 400ºF.
2. In a small bowl, place the ginger, chili powder, turmeric (curry), and olive oil. Mix well with a whisk.
3. Place the pork in an 11"x7" baking dish. Spread the oil mixture over the loin and bake, uncovered, for 25-30 minutes. Let stand for 5 minutes on a cutting board before slicing.
