1 onion, chopped
2 carrots, chopped
2 celery sticks, chopped
2 cloves garlic, minced
4 tbsp flour
1 cup beer (I prefer using Spotted cow but recipe states for pilsner)
4 cups of chicken broth
½ cup half & half
2 cups of shredded cheddar cheese
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
¼ tsp pepper
1/8 tsp red pepper flakes
Salt to taste (or Creole seasoning if you'd like a little spicy)

Directions:
Melt butter on medium heat in large pot
Add in onion, carrots, celery, and garlic; cook for about 3-4 mins
Add flour to pot, stir; it will form paste
Add beer and broth; bring to gentle boil
Once at gentle boil turn heat to low
Add in half & half, gently mixing
Add cheese while stirring
Allow cheese to melt then add mustard, Worcestershire, pepper, and pepper flakes
Blend ingredients in blender
Add salt in
Serve soup bowls, add Bacon for topping
