2 1/2 Cups flour
4 1/2 tsp. baking powder
1 tsp. salt
1 3/4 cup sugar
3/4 cup shortening
1 1/8 cup milk
1 tsp. almond flavoring
2/3 cup unbeaten egg whites

Directions:
Directions:
Sift flour, baking powder, salt and sugar together.
Add shortening and milk, beat 2 mins. at high speed. Add almond flavoring and egg whites.
Beat another 2 minutes. Pour into greased and floured cake pan(s).
Bake 35-40 minutes at 350º

Even with the ease of today's cake mixes, this is still my all time favorite cake recipe. Not sure why the "coconut" in the name, but probably was the cake mix used for Easter lamb cakes (remember those?) in which coconut was put on top of the icing.
