1 Can of Bluebereries (no sugar)
1/2 C. Oil
1 Stick Butter - room temperature
1-3/4 C. Sugar
3 C. Flour
2 Eggs
1 tsp. of Butavan flavoring ** See Note
1 tsp. Baking Soda
1 tsp. Baking Powder
1 C. Buttermilk

Preheat oven to 400º. Grease muffin pan. Drain blueberries (save juice). Mix oil and butter. Add sugar, flour, flavoring, baking powder, and soda. Add buttermilk, juice from berries and stir in berries. Stir until just combined. Bake for 18-20 min.

Butavan Note: This used to be a flavoring that could be bought in Lubbock. There is still a bakery that sells it. It can be purchased through Amazon, but I don't know if it is the same type mixture. If you can't find it, combine vanilla, almond, and butter extracts to recipe. The original Butavan was a thick mixture.

This was an all time favorite recipe at the Gridiron Restaurant in Lubbock. When I was a child, this was the restaurant my parents often went to after a Tech football game. While waiting, they would pass around this AWESOME muffins. They were so poplular they were in several cookbooks and the reason why many bakeries in Lubbock sold Butavan! The restaurant no longer exists, but it was a popular Lubbock restaurant for over 25 years.
