8 oz. Grape Tomatoes
1/2 C. Panko Breadcrumbs
17.6 oz Gnocchi (I use 1 bag)
8 Tbsp. Cream Cheese
1/2 C. Parmesan Ceese
1/2 Shallot
2 tsp. Garlic Powder
2 tsp. Vegetable Stock Concentrate (or to taste)
10 oz. Baby Spinach
1 tsp. Chili Flakes
4 Tbsp. Butter (will be used 2 Tbsp. at a time)
1/2 C. water

Bring medium pot of salted water to boil. Halve tomoatoes and thinly slice shallot. When water is boiling, add in gnocchi and cook until tender 3-4 min. Drain. While gnocchi is cooking, melt 2 Tbsp. in a large pan over medium-high heat. Add panko and cook until golden brown and toasted. (2-3 min.) Stir in 1 tsp. garlic powder and cook until fragrant - around 30 seconds. Turn off heat and transfer to a plate and season with salt and pepper. Melt 2 Tbsp. butter in pan used for panko crumbs over medium high heat. Add shalot and cook until slighly softened 2- 3 min. Stir in 1 tsp. garlic powder and cook until fragrant. Stir in 1/3 C. water, stock concentrate, and cream cheese, stirring until combined and cream - 2-3 min. Season with salt and pepper. Stir in spinach into pan with sauce. Cook, stirring until spinach is wilted and tomatoes are softened 3-4 min. Stir gnocchi into pan with sauce until thoroughly coated, adding a splash or two of water as needed. Season with salt and pepper. Top with panko crumbs and chili flakes.
