1 C. Shortening
1-3/4 C. Sugar
1 tsp. Vanilla
3 Eggs, seperated
1 C. Cold Water
1/3 C. Pureed Tomatoes
2-1/2 C. Cake Flour
1/2 C. Cocoa
1-1/2 tsp. Baking Soda
1 tsp. Salt

Directions:
Directions:
Preheat oven to 350º. Cream together first three ingredients. Blend in egg yolks. Beat egg whites until stiff and fold into mixture. Add in cold water and pureed tomatoes. Sift dry ingredients and add dry mixture to cream mixture. Bake in two greased and floured 8-1/2' round pans for 35-40 min. Frost with chololate butter frosting (recipe below)

Chcolate Frosting:
2 C. Confectioner's Sugar
1 stick of softened butter
1/3 Cocoa
1 tsp. vanilla extract
1 tsp. almond extract
Water

Mix well, using water to acheive the correct density. and frost cooled cake.

This was a recipe brough home by either Heather or Amber in 2nd grade after reading the book "Thunder Cake". We decided to make this (during a thunderstorm!).
