4 to 5 lbs. potatoes peeled
1 lg. onion chopped
2 qts. water

Cook above ingredients until potatoes are almost soft.

Add the following ingredients and cook for 30 minutes stirring frequently.

1 lb. frozen mixed vegetables (Jolly Green Giant)
4 T. olive oil
1 can of tomato soup
3/4 can of water

Add: 28 oz. crushed tomatoes and 1 can of water, salt and pepper to taste.
Cook 30 minutes.

Add ( 2 )14 3/4 oz.Del Monte cream style corn and 1 can of water.
Check salt and pepper taste and add more if needed.

Simmer for another 20 minutes, stirring often.
