250 grams (9 ounces) whole wheat or wholemeal flour
250 grams (9 ounces) flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon dry mustard powder
200 grams (7 ounces) grated cheddar
100 grams (4 ounces) grated Parmesan-Reggiano
400 milliliters (14 ounces) milk
1 egg, beaten

Preheat the oven to 220°C/425°F (220°C fan/400°F fan). Line a baking tray with parchment paper.

Place both flours, baking powder, salt, cheddar and half the parmesan into a large bowl and mix to combine. Add the milk and bring the ingredients together with your hands or a wooden spoon. The mixture will be sticky at this point.

Tip the mixture onto a lightly floured surface. Fold and knead to form a soft dough.

Flatten or lightly roll the dough to 2 ½ centimeters/1 inch thick. Dredge a 6 centimeters/2 ½ inches cutter in flour to ensure a precise cut and cut out 15 scones. Place them onto the baking tray. Brush the tops of the scones with the beaten egg and sprinkle with the remaining parmesan.

Cook for 15 to 17 minutes until the scones are risen and golden-brown. Serve warm with butter.
