2 cups sliced rhubarb
1 1/2 cups sugar
2 Tsp. cornstarch
2 eggs
1 cup heavy cream
1 9 inch pie shell

Directions:
Directions:
In a 9 inch pie shell., put 2 cups sliced rhubarb in a bowl. Mix in 1 1/2 cups sugar, 2 Tablespoons cornstarch. Mix to a smooth cream texture, no lumps. Then mix in 2 eggs. Mix well then add 1 cup heavy whipping cream. Mix well and pour over rhubarb. Put on a baking sheet to catch any spill over ( do not cover rhubarb) Bake in a preheated oven at 350 degrees for 1 hour
