2 c. all-purpose flour
2 tsp. baking powder
¼ tsp. baking soda
1 tsp. white sugar
¼ tsp. salt
6 Tbsp. unsalted butter, frozen solid
1 c. cold buttermilk (+ a few extra teaspoons, if needed)

Directions:
Adjust oven rack to middle position and heat oven to 450 degrees. With a fork, mix flour, baking powder, baking soda, sugar, and salt in medium-sized bowl. Using the large holes on the box grater, coarsely grate the frozen butter into the dry ingredients. Mix quickly with fingertips to blend evenly.

Stir in buttermilk with fork and mix until dough just comes together. If necessary, add a few extra teaspoons of buttermilk to any dry patches.

Turn dough out onto floured work surface. Cut into 8 or 9 biscuits (with cutter or glass). Form remaining scraps into the last biscuit or two, without overhandling it too much, shape into a round ball(s).

Spray a 9-inch cake pan with cooking spray and arrange biscuits in pan. Bake until golden brown, about 20 minutes. Serve immediately. Yields 10 biscuits. (Also referred to as "Buttermilk Biscuits.")
