2 cups flour
1/2 cup white sugar
1Tbsp baking powder
1/4 tsp salt

3/4 cup milk
1/3 cup oil
1 egg, beaten
1/2 tsp almond extract

1 cup chopped rhubarb

Directions:
Directions:
Heat oven to 375º
Sift together dry ingredients.
Combine milk, oil, egg and almond extract.
Add to dry ingredients.
Mix only enough to moisten.
Fold in rhubarb
Fill paper lined muffin tins.
Sprinkle top of muffin with sugar.
Bake for 30-35 minutes until golden brown.
Cool and Serve
