CAKE:
1 pkg yellow cake mix
1/2 c vegetable oil
4 eggs
11 oz can mandarin oranges and juice

Put eggs in bowl first and beat. Add remaining ingredients and mix until orange segments are thoroughly broken up and distributed throughout the mix. Pour batter into 9x13 greased and floured pan. Bake for 20 minutes in a preheated 350º oven. Let cool before adding topping.

TOPPING:
9 oz container of Cool Whip
6 oz pkg instant vanilla pudding
20 oz can crushed pineapple and juice

Mix instant pudding with crushed pineapple and juice together until well mixed. Fold in Cool Whip until thoroughly mixed. Spread over cooled cake and chill in refrigerator. This is a light and refreshing dessert.
