2 boxes Jiffy corn meal muffin mix
(prepared with milk and 1 egg)
1 medium onion, diced
3 Tbsp. pickled jalapeño peppers, diced small

Directions:
Directions:
On stovetop, heat large pot with vegetable oil for frying.

Stir together Jiffy mixes, 2 eggs, and start with ½ c. milk (rather than ⅔ c. for the 2 boxes). Chop onion and jalapeños and stir into mix. Add a bit more milk if it is dry.

Carefully, drop a heaping tablespoon of dough into hot grease, and fry until golden brown. (Do not let the grease get hotter than 350 degrees F.) Drain hush puppies on paper towel-lined plate. Enjoy with fish and a salad.
