Harry's Keilbasa
FRESH KIELBASA:
20 lbs pork butt / ground beef
NOTE: pork to beef ratio = 3:1
4 bulbs garlic, crushed fine (not cloves)
1/4 cup coarse black pepper
1 tsp ground coriander
1/3 cup marjoram
1 tbsp sugar
1/2 cup Kosher salt
2 tbsp whole mustard seeds
Water as needed - about 4 cups

Leave the mustard seeds whole.

This kielbasa is made to be cooked just before eating, not smoked.
