12 oz. penne pasta
1 c. pesto
1 c. half and half (or dairy-free alternative, we use coconut cream)
2 c. rotisserie chicken breast, cut into chunks
1 (14 oz.) can quartered artichoke hearts, drained and chopped
½ c. shredded Parmesan cheese (or dairy-free alternative)
2 tbsp. basil, julienned or diced
Salt and pepper, to taste

Directions:
Directions:
1. Cook pasta according to package directions.
2. Add pesto and light cream/coconut cream, and stir until well mixed. Simmer until reduced slightly.
3. Add chicken and artichoke hearts to pasta and mix well.
4. Add in shredded Parmesan cheese, stirring until melted.
5. Top with basil.
6. Serve hot.
