2 tbsp Canola Oil
4-6 Bone-In Skin On Chicken Thighs
½ tsp Paprika
Salt and Freshly Ground Pepper
4 med. Carrots Peeled and Sliced Into ¼" Rounds
3 lg. Celery Stalks Cut ¼" Thick
2 lg. Shallots, (about 4 oz) Finely Diced
2 lg. Cloves of Garlic, Minced
1 tbsp Fresh Thyme Leaves, Chopped
1 tbsp Fresh Oregano Leaves, Chopped
2 tsp Finely Grated Lemon Zest
1 tbsp. Fresh Lemon Juice
1 c Chicken Stock
1 tbsp Chopped Fresh Chives

Heat 1 tbsp of th Canola oil in a large skillet over medium-high heat. Toss the chicken with the ½ tsp Paprika, 1 tsp salt and a few grinds of pepper in a large bowl. Place the chicken skin side down in the skillet and cook undisturbed until the chicken is golden, but no too dark, about 5 minutes. Remove the chicken with only one side cooked, to a plate using a metal spatula and add the remaining 1 tbsp canola oil to the skillet.
