1-2 Sticks of Butter
3 med Onions chopped
3 ribs of Celery chopped
2 Bell Peppers chopped
1/4 c. Flour
4 tbsp. Parsely chopped
3 lbs. Shrimp or Crawfish or Crab meat
1 qt. Half and Half milk
1 lb. Velveeta Cheese cut in 1/2 inch thick cubes
2 tbsp. Jalapeno Peppers chopped (remove seeds)
3 cloves crushed Garlic
1 lb. package of Fettucini noodles
Parmesan Cheese to taste

Melt butter in a large heavy saucepan. Add onions, celery, and bellpepper. Cook for 10 minutes until clear. Add flour and blend in well. Cover and cook for 15 minutes. Add parsley and shrimp (or other seafood). Cover and cook for 20 minutes, stirring often. Then add Half and Half, cheese, and garlic. Mix well. Season to taste. Cook noodles according to package. Then drain and mix in with the sauce thoroughly. Pour into a 3 quart buttered casserole dish. Sprinkle with Parmesan cheese. Bake at 350º for 12 minutes.
