1 T canola oil
1 1/2 lbs boneless skinless chicken breasts, trimmed and cut into bite-sized pieces
1 small onion, finely chopped
1/3 C all-purpose flour
4 C reduced fat milk
3 C broccoli florets
2 T water
2 9oz packages of precooked brown rice
1 1/2 C shredded reduced-fat sharp cheddar cheese
1 t dry mustard
1/2 t garlic powder
3/4 t salt
1/2 t ground pepper
(1 C prepared crispy onions)

1. Heat oven to 400 degrees
2. Heat oil in a large high-sided ovenproof skillet over medium-high heat. Add chicken and chopped onions; cook, stirring occasionally, until the chicken is no longer pink on the outside, about 7 minutes. Sprinkle the mixture with flour and cook, stirring occasionally, for 1 minute. Add milk to the pan and bring to a boil, stirring frequently. Boil, stirring for 1 minute.until broccoli is
3. Place broccoli and water in microwave. Cover and microwave until tender, about 3 minutes. Drain.
4. Remove pan from heat and carefully stir in rice, cheese, dry mustard, garlic powder, salt, pepper, and broccoli. Sprinkle with crispy onions.
5. Bake the casserole until bubbling at the edges, about 10 minutes. Let stand for 5 minutes before serving.
