2 Tbsp. olive oil
1 lb. ground beef
1 onion, chopped
salt and pepper to taste
1 tsp. chili powder
1 tsp. paprika
1 tsp. garlic powder
1 lb. pasta, elbow
1 zucchini, grated
1 c. low sodium beef broth
1 1/2-2 c. shredded cheddar cheese
1 Tbsp. ketchup
1 1/2 c. milk

In large pot set over medium heat, add olive oil, onion and beef. Season with salt and pepper. Cook until brown. Stir in seasonings. Add pasta and zucchini and stir. Then pour in broth and milk. Add ketchup and stir to combine. Bring to gentle boil over medium heat. Simmer 5-8 minutes until pasta is al dente, stirring often. Stir in cheese and cook a few minutes until creamy.
