3 tbsp. oil
12 corn tortillas
1 lb. ground beef
2 cups chopped onions
1 cup green peppers
2 cloves garlic, minced
2½ tsp. chili powder
½ tsp. salt
½ tsp. pepper
½ tsp. oregano
1- 16 oz. can tomatoes and juice
1 can tomato sauce
1 cup cooked kidney beans
½ cup chopped olives
1- 10 oz. can mild enchilada sauce
1 cup shredded cheddar cheese

Cook tortillas in a skillet with a little oil just to soften then drain on paper towel. Grease 12½ x 9 baking dish. Layer 6 tortillas in bottom, set aside. In a large skillet, cook beef and drain on a paper towel. In 1 tbsp. of oil cook, onions, pepper, and garlic until vegetables are tender. Stir in seasoning, and add beef, tomatoes, tomato sauce, and bring to a boil cook until thick. Stir in beans and olives then pour mixture in baking dish. Top with remaining tortillas and cover with enchilada sauce. Bake at 375° for 25 minutes. Top with cheese and bake an additional 10 minutes until cheese is melted.
