1 lb. ground beef
½ cup fresh breadcrumbs
1 egg
1 tsp. salt
2 cups water
1 cup uncooked rice
2 large carrots
½ cup chopped green peppers
¼ cup chopped onions
½ lb. cheese cubed
Directions:
Directions:
Combine meat, breadcrumbs, eggs, and salt, mix well. Shape into meatballs and brown in a small amount of oil in a large skillet then drain. Add water, rice, carrots, green peppers, and onion. Cover and simmer for 25 minutes, then add cheese and heat until melted. Makes 4-6 servings.
