Shelley's Pecans Recipe

1 lb. pecan halves
1 c. sugar
½ tsp. cinnamon
¾ tsp. salt
Mix in a large bowl.

2 egg whites- use a hand mixer to beat until stiff peaks.

Melt 1 stick of butter in a 15" jelly roll pan at 325º. Fold egg whites into a bowl of pecans. Mix into the dry mixture until pecans are blended. Pour into the pan- blend melted butter into the slurry mixture. Spread nuts out in the pan and place in the oven for 10 minutes. Remove pan, mix, spread nuts out again, and return to oven. Repeat until nuts seem dry and egg/butter mix is baked on them. Generally takes about 5-6 10-minute intervals (about 50-60 minutes). Remove pan, let nuts cool then store in an airtight container.
