Marinade

1 c. vegetable oil
1 c. apple cider vinegar
1 c. sugar

Put these ingredients in a pan on the stove and heat until it comes to a boil, stirring often.

1 (15 oz.) can black-eyed peas (drained and rinsed)
1 (15 oz.) can black beans (drained and rinsed)
1 (15 oz.) can corn- I use the yellow/white mix (drained and rinsed)
1 red or green bell pepper, chopped into small pieces
1 onion, red or yellow, chopped into small pieces
1 small can of chopped green chilies- optional

Mix the remaining ingredients. Pour marinade over the mixture and stir. Optimally let sit for 12-24 hours. Drain before serving. Serve with Frito Scoops or other tortilla chips.

This recipe was given to me by a neighbor. I tend to make it around Easter because its sweet and always tastes so good after giving up sweets for Lent!
