Noni's Cranberry Nut Bread Recipe

2 c flour
1 c sugar
1½ t baking powder
1 t salt
½ t baking soda
¾ c orange juice
1 T grated orange peel
2 T shortening
1 egg, beaten
1½ c fresh cranberries, coarsely chopped
½ c nuts

Directions:

Preheat oven 350º F
Grease 9x5 loaf pan

Mix dry ingredients
Stir in OJ, orange peel, shortening and egg
Mix until just blended, DO NOT OVERSTIR
Stir in cranberries and nuts

Bake 55 minutes until toothpick comes out clean.

Cool on rack for 15 minutes.

Growing up we really didn't eat or even have access to sweets. Flavored yogurt didn't even exist until I was about 10 years old. Every Fall I would get excited because Noni would make her cranberry nut bread. It always tasted the best warm and slathered with butter.

I always remember to make it each year and bring a loaf to Noni. Some traditions are just worth repeating.
