Steak Marinade:
1 Lb Flank Steak
1 Tbsp Cornstarch
1/2 Tsp Baking Soda
1 Tbsp Oyster Sauce
1 Tsp Soy Sauce
1 Tsp Oil
1 Tsp Ginger
1 Tsp Garlic

Sauce:
1 Cup Chicken Broth
2 Tbsp Soy Sauce
1 Tbsp Oyster Sauce
1 Tsp Dark Soy Sauce (Use Reg if you don't have dark soy)
1 Tsp Sesame Oil
1 Tbsp Brown Sugar (adjust pending taste)
White Pepper to taste
Optional: Shaoxing Wine (2 Tbsp) to deglaze
Cornstarch slurry to thicken

Cut flank steak into thin strips, put in a bowl.
Mince garlic and ginger. Add HALF of the garlic and ginger, cornstarch, baking soda, oil, soy sauce, and oyster sauce to the steak to marinate. Mix & set aside.

Chop up broccoli & start cooking rice

Make sauce: combine chicken broth, soy sauce, oyster sauce, dark soy (or regular), sesame oil, brown sugar, white pepper. Taste. Adjust as needed.

Get pan hot, add oil. Add beef, flatten the pieces and leave alone to brown (might need to do in batches pending pan size). Once it starts cooking around the edges, sauté beef. After about 1 minute, remove from pan(don't want it to overcook, so pull early).

Add a little more oil to pan. Add the remaining ginger & garlic. Optional: deglaze with shaoxing wine. Add in broccoli and sauté. Add lid, let broccoli cook. Add in sauce. Thicken with cornstarch slurry. Once it starts to thicken, add in beef and stir to combine. Cook for another minute. Serve with rice (or noodles).
