2 tbs oil
2 onions diced
1 bell pepper diced
3 cloves garlic minced
2 cups roux
6 cups chicken broth
8 cups warm water
5 pound bone in chicken breasts with rib meat
Seasoning to taste

Cooked rice to serve

Directions:
Directions:
1. Add oil to pot and heat

2. Add onions, peppers and garlic and sauté

3. Add roux

4. Add slowly warm water and chicken broth

5. Add chicken

6. Cover at an angle ( not completely) and Cook 2 hrs

7. Remove chicken and debone

8. Return chicken to pot.

9. Serve over cooked rice

If still too runny for your liking add Tony’s instant powder roux until desired consistency.

Can also be made with deboned chicken breasts.

***** Never completely cover a pot with Roux or it will boil over!
