Ingredients:  
12 c celery cut in 1" pieces
2 onions, coarsely chopped
1½ lb. potatoes, cut in chunks
6 - 8 c. broth

Directions:
Directions:
Saute celery and onion until onion is soft (ok to brown).
Add potatoes and broth. Bring to boil and simmer until celery and potatoes are soft.
Season to taste with salt and pepper.
Puree with stick blender. (Remove some pieces of potato and celery to leave unblended in soup)
