BREAD CUPS
1. 24 slices white bread
2. 2 Tbsp butter, softened

MUSHROOM MIX
3. 6 Tbsp shallots, finely chopped
4. 1 cup mushrooms, finely chopped
5. 2 Tbsp flour
6. 1 cup heavy cream
7. 1 tsp salt
8. ⅛ tsp cayenne pepper
9. 1 Tbsp parsley, finely chopped
10. 1½ chives, finely chopped
11. ½ tsp lemon juice
12. 2 Tbsp parmesan cheese, grated
13. 4 Tbsp butter

BREAD CUPS
1. Use 2 Tbsp butter to coat 24 muffin tins.
2. With 3" round cookie cutter, cut rounds from each slize of bread.
3. Press the circles into the greased tins and form cups.
4. Bake 10 minutes at 400º. Remove from tins and cool.

MUSHROOM MIX
1. Sauté shallots and mushrooms in butter. Cook 10-15 minutes until moisture evaporates.
2. Sprinkle flour over mixture. Stir in well. Add in cream, stirring constantly. Bring mixture to a boil. To thicken, turn heat very low and cook for 2 minutes longer.
3. Remove from heat and stir in all remaining seasonings, herbs, and lemon juice.
4. Fill croustades with mixture. Sprinkle with cheese and butter.
5. Bake 10 minutes.
