Angel Hair Pasta
2 T olive oil
4 C fresh roma tomatoes
1/4 C chopped onion
1 tsp sugar
1/2 tsp red pepper flakes
2 cloves of garlic, minced
salt and pepper to taste
2 slices of American Cheese, optional
10-12 leaves of fresh basil, torned
Pecorino Romano cheese, fresh grated

Cook Angel Hair Pasta. While pasta is cooking, fix the sauce.

In large frying pan heat olive oil on medium heat. Add onions, sugar and seasonings and cook until tender. Add garlic and cook for 1 minute. Add fresh tomatoes and cook for about 10 minutes, stirring frequently. Stir in American cheese. Stir well. Tear basil into strips and add to sauce just before serving.

Serve sauce over pasta and add grated cheese.

Hunts diced petite tomatoes 2 or 3 (16 oz) cans be used instead of fresh. Reduce cooking to 5 minutes.

Quick and Easy! My next-door neighbor (Italian) gave me this recipe when we lived in Scottsdale, AZ. They owned a restaurant and this was on their menu. I questioned the "American Cheese" but it gives it a unique flavor.
