1 cup orzo pasta
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
4 cups fresh spinach, chopped
1 cup vegetable broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
Directions:
Cook the orzo pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and minced garlic, and sauté for 2-3 minutes until the onion is translucent and fragrant.
Add the sliced mushrooms to the skillet and cook for 5-7 minutes, until they are browned and tender.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
Pour in the vegetable broth and bring to a simmer.
Reduce the heat and stir in the heavy cream, followed by the grated Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
Add the cooked orzo to the skillet and toss to coat with the sauce. Season with salt and pepper to taste.
Garnish with freshly chopped parsley before serving.
