3 1/2 pounds of small red potatoes -cut into uniform bit sided cubes
8 oz sour cream
1-2 T mustard
1/4 bunch of parsley- minced
1/4 bunch of green onions- finedly chopped
2 ribs of celery- sliced finely diced
1/2 t lemon juice
salt and pepper to taste
*optional* add a bit of hot sauce

Directions:
Directions:
Fill a large pot with water and 1/2 t lemon juice and bring to a boil. Add potatoes to boing water. Cook for about 10 min. Test. Remove from water when done.
Mix the sour cream, mayo, mustard, *hot sauce* Then add the onions, celery and parsley. Add Salt and pepper to taste. * could add more lemon juice here as well*
Toss with the potatoes. Could slightly mash some of the potatoes.
Chill for at least 30 min before serving.
