Directions:Prepare the Shrimp: If using raw shrimp, you can either cook them in boiling water until pink and opaque or use the lime juice to "cook" them in a ceviche style. If the shrimp are pre-cooked, simply chop them into bite-sized pieces. Marinate the Shrimp: Place the shrimp in a large bowl. Add the lime juice, making sure the shrimp is fully submerged. Let it marinate for about 15-20 minutes if using raw shrimp, until they turn pink. Combine Ingredients: In a separate bowl, combine the diced tomatoes, chopped cilantro, finely chopped red onion, and diced avocados. Add the marinated shrimp (along with the lime juice), garlic salt, olive oil, and black pepper. Mix everything together gently to combine well. Optional Additions: If desired, add diced cucumber and finely chopped serrano or jalapeño chiles for extra crunch and heat. Serve: Spoon the ceviche mixture onto crispy tostadas. Add a drizzle of Valentina sauce if desired. Note: You can prepare the ceviche ahead of time and let it chill in the refrigerator to allow the flavors to meld together.
