4 c. peeled chopped Gravenstein apples
2 c. sugar
½ c. oil
1 c. walnuts (optional)
2 tsp. vanilla
2 eggs
3 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Directions:
Directions:
Mix apples with sugar. Add oil, nuts and well beaten eggs, add vanilla. Add flour, soda, cinnamon and salt to mixture. Pour into well-greased 13 x 9 x 2 pan or tube pan (Bundt pan). Bake at 350 º for 45-60 minutes. Serve with whipped cream topping if desired.
