3 C all-purpose flour
1 T plus 2 tsp pumpkin pie spice
2 tsp baking soda
1½ tsp salt
3 C sugar
1 (15 oz) can Libby's 100% pure pumpkin
4 large eggs
½ C vegetable oil
½ C water or orange juice

Directions:
Directions:
Preheat oven to 350º. Paper-line or grease 30 muffin cups. Combine flour, pumpkin pie spice, baking soda, and salt in a large mixer bowl. Beat until just blended. Add flour mixture to pumpkin mixture and stir just until moistened. Spoon batter into prepared muffin tins, filling ¾ full. Bake 25-30 minutes or until toothpick inserted comes out clean. Cool in pans for 10 minutes. Remove to wire racks to finish cooling. Store muffins in resealable bags or covered container. For 72 muffins, prepare as above, filling ¾ full, baking 15-17 minutes. For jumbo muffins, prepare as above, filling ¾ full, baking 33-36 minutes.
