1 T olive oil
1 onion chopped
4 medium sized zucchini- roughly chopped in bite size chunks (2 1/4 lbs)
2 carrots- chopped
2 celery stalk chopped
1 clove garlic chopped
750 ml veg stock
handful basil leaves roughly chopped
1/4 t salt and pepper

1. Heat the oil in a large pot over a medium/low heat, then add the onion and cook for 2-3 minutes or until soft.
2. Add the garlic and veggies, lower the heat slightly, cover the pan with a lid and cook for 7 minutes or until the zucchini are lightly browned and softened. Check them often and give them a stir.
3. Add the veg stock and simmer, uncovered for 5 minutes. Season with salt and pepper.
4. Using an immersion blender, blend the soup along with the basil.
