1 TBL olive oil
1/2 onion, diced
1/4 cup chopped cilantro
1 can black beans, drained and rinsed
10 oz can Rotel
1/4 cup taco seasoning
8 oz cream cheese
Juice of 1 lime
2 medium chicken breasts, about 6 oz each

Directions:
Directions:
Heat olive oil in large pot over medium heat. Cook onion in oil 5-10 minutes, until translucent. Add Cilantro, beans, rotel, taco seasoning, and cream cheese to the pot. Stir until cream cheese until fully melted and incorporated. Add broth, lime juice, and chicken. Stir well and make sure chicken is full submerged. Bring ingredients to boil over high heat. Cover and reduce heat to low. Simmer for about 20 minutes. Remove chicken, shred, and return to pot. Stir well and serve.
