1/2 cup oil or 2/3 cup margarine
1 cup sugar
2 eggs
1 1/2 tsp vanilla
2 3/4 cups flour
2 1.2 tsp baking powder
1 tsp salt
1 1/4 cups soy milk (water or juice can be substituted)

FILLING

1/3-1/2 cups sugar
1 tsp cinamon
1 tbsp cocoa

TOPPING

1/2 cup chocolate chips
1/4 cup margarine, or 2-3 tbsp oil
1/2 cup nuts, optional
1/3 cup sugar
5-6 tbsp flour
generous pinch of cinamon

CINNAMON GLAZE (optional)

1 1/2 cups confectionary sugar
1/4 tsp cinamon
2-3 tbsp soy milk

Directions:

Preheat oven to 350º

Beat together oil and sugar. Add eggs one at a time. Add dry ingredients alternately with liquid and mix until well combined.

Combine filling ingredients in a small bowl. Pour half of batter into a lightly greased 9x13 pan. Sprinkle filling ingredients. Pour rest of batter on top.

Mix topping ingredients together. Spread evenly over batter. Bake for 45 minutes. When cool, mix together glaze ingredients and drizzle over cake.

FOR BUNDT PAN: Topping ingredients need to first be baked in order not to stick to pan. Bake on 350 for 7-10 minutes. When cake is cooled, first drizzle glaze, then topping, then some more glaze.
