4 slices thick cut bacon, cut crosswise into 1 inch pieces
1½ cups chopped onion
⅓ cups minced peeled fresh ginger
2 28oz cans original flavor baked beans
½ cup mild flavored (light) molasses
2 Tbsp. plus 2 tsp. apple cider vinegar or distilled white vinegar

Set oven rack in lower middle position; preheat oven to 325º. Heat heavy large pot over medium high heat. Add bacon; cook until crisp, stirring often. Transfer to paper towel to drain. Pour off all but 2 Tbsps drippings from pot. Add onion, sauté until beginning to soften, about 5 minutes. Add ginger, sauté 1 minute. Stir in beans with juice, molasses, vinegar, and bacon; bring to a simmer. Transfer to a 11x7x2” glass baking dish. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bake until top is dark brown and bubbling, about 45-60 minutes. Let stand 15 minutes, serve. Serves 8.
