ICE CREAM/SHERBERT DESSERT Recipe

CRUST

2 sleeves ritz crackers crushed
1/2 to 1 stick butter melted
2 tsp cinnamon
1 tblsp sugar

FILLING

1/2 gallon vanilla ice cream
1 quart lime sherbert

TOPPING

1/2 c sugar
2 tsp cornstarch
dash salt
dash nutmeg
1 c water
2 egg yolks
2 tblsp butter
1/2 tsp grated lemon peel
2 tblsp lemon juice

Directions:

Crush the ritz crackers
Add the cinnamon and sugar
Add the melted butter
Mix well and press into a freezer safe 9x13 dish

Soften the ice cream and sherbert
Mix it well making sure to distribute the sherbert throughout

Spoon on top of the crust
Place in the freezer until frozen

Make the lemon sauce for the top

Mix the sugar and cornstarch, salt and nutmeg
Gradually add 1 c water
Cook over low heat until thick and clear (stir constantly)
Stir small amount of the mixture into 2 beaten egg yolks, then return to the hot mixture.
Cook and stir 1 minute
Remove from heat and add the butter, lemon peel and lemon juice
Blend well
Spread over top of the ice cream and return to freezer until all is frozen
