6 egg yolks
⅓ Cup sugar Cup
1 ½ Cups heavy cream
1 Teaspoon vanilla extract
1 4-ounce unsweetened baking chocolate bar, melted
4 Tablespoons brown sugar

Directions:
Directions:
1. Pre-heat oven to 325 degrees. Whisk egg yolks and sugar until
sugar is dissolved. Add cream, vanilla and chocolate. Continue
until well blended.
2. Divide mixture into 4 4ounce ramekins. Place in water bath and
bake until set around the edges 45 to 50 minutes. Remove from
oven and leave in water bath until cooled. Chill ramekins for at
least 2 hours. Spread brown sugar on top of each ramekin and use
chef torch until crystalized. (You can also place under broiler until
sugar is melted)
