The measurements are per serving


Ingredients:

1/2 cup Paella rice per person (Bomba or Matiz)
1 cup chicken stock per 1/2 cup rice
1 pinch saffron per serving dissolved in 1/2 cup of dry warm white wine
2 Tbs olive oil(the bottom of the pan has to be fully covered when oil is warm)
1 piece of chicken thigh
1/2 sausage of choice(spanish style chorizo if you can find it)
1/2 tsp smoked paprika
1 clove garlic minced
1/4 onion finely chopped
1/2 tomato grated
some vegetables of your choice(peas.artichoke hearts in oil,great white beans)
olives
1 red pepper,roasted and peeled for garnish
parsley chopped for garnish
lemon wedges for garnish

Directions:
Warm chicken stock in pot.Also warm the wine with the saffron.Put aside.
Season the chicken with salt and pepper.
Warm olive oil on medium heat till wavy and add the chicken skin side down.Cook until golden and turn for another 5 minutes.Remove from pan.Add the sausages and cook for a few minutes till they have some color. Remove from pan.
Add onions and garlic and saute until translucent.Add the paprika,stir and then add the rice,stirring until well coated with oil.Add the grated tomato and then the wine with the saffron.Keep stirring until the liquid is almost gone and then add the stock.Put the chicken and sausage back,nestling into the rice.Bring to a boil,scraping the bottom of the pan and then bring the paella to a simmer.Simmer for about 25 minutes undisturbed and then add any vegetables to the pan.Taste to see if the rice is done.If its done put a lid on the pan and let the paella rest for about 15 minutes.
Have a glass of wine!!!
When the paella is ready put strips of the roasted pepper on top and garnish with chopped parsley.Serve with lemon wedges.

I love making paella.Its easy,so yummy and can be made with meat and /or seafood.Its an great dish for a crowd (just make sure you have a big enough pan)and it looks stunning.So go invite all your friends and have a paella party!!!
