3 chicken breasts, pounded flat, about 1/4 inch
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 1/2 tbsp cornstarch
1 tsp paprika
1-2 tbsp all-purpose seasoning (I used Bojangles Fry Seasoning)
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 1/2 cup buttermilk
1 egg
1 Tbs hot sauce
Oil for frying

Gravy:
1 tbsp reserved oil from frying
3 tbsp butter
1/3 cup flour
2 cup milk
1/2 tsp parsley flakes
Salt & pepper to taste

Directions:
Whisk together buttermilk, egg, and hot sauce. Add chicken and let marinate an hour or so.

Mix flour and all other dry ingredients. Remove chicken from marinade, dip/coat each piece with flour. Set to the side and heat oil to about 350º.

While oil is heating up, go back and recoat your chicken, if needed. Fry each piece 3 min each side, or until done.

Gravy: melt 3 tbsp butter, add about 1 tbsp chicken oil and add in 1/3 c flour. Tbh, I just used the leftover flour from the chicken. Just make your gravy however you normally do.

I actually messed this up. I wasn't supposed to marinate the chicken in the buttermilk. We think it came out better, sooooo I'mma keep doing it how the ancestors tell me. Seasonings are pretty much whatever you like. Bojangles seasoning is salty AF so I didn't add any extra salt. And y'all know I don't REALLY measure my seasonings. I just shake it until the color looks right, lol. Um, but I did measure the baking powder/soda/cornstarch.
