2 to 3 sweet potatoes
2 T butter or bacon grease
1 to 2 T brown sugar
salt
grated orange rind, optional
cinnamon, optional
nutmeg, optional

Directions:
Directions:
Peel and slice sweet potatoes very thin, 1/8 to 1/4 inch thick. Melt butter/bacon grease into heavy skillet and add sweet potatoes in one layer. Cook slowly and for about 5-7 minutes. Sprinkle with salt and brown sugar to taste. Turn over and fry the other side.

Leftover baked sweet potatoes can also be fried.
