2 lbs 2-3 inch Red potatoes or Yukon gold
2 T olive oil
1 T butter
3-4 cloves garlic, minced
1 tsp paprika
1 T fresh rosemary
1 T fresh thyme
1 tsp kosher or sea salt
1 tsp fresh ground black pepper

GARNISH WITH:
fresh grated Parmesan cheese and parsley

Directions:
Directions:
Preheat oven to 425 degrees. Scrub potatoes and halve or quarter potatoes if they are large. You can peel a strip of skin from around the potatoes. Dry well and put in a plastic bag. Add rest of ingredients and shake bag. Pour into a pan with 1 inch sides. Roast until tender for 25 to 35 minutes, stirring occasionally. Sprinkle with cheese and parsley the last 10 minutes if desired.

You can also boil the potatoes for 10 minutes, drain well and put on pan and then add seasonings and just stir them around in the pan to coat.
